Lobster was once considered the poor man’s chicken but is now a delicacy in modern Irish cuisine and one of the most valuable species landed by Irish fishermen. Lobster fishing vessels are exclusively small fishing boats using pots and creels. To protect stocks, young female lobsters carrying eggs are marked with a v-notch and are released unharmed.
